Ingredients
- 320g paccheri
- 120g tuna in olive oil
- 4 anchovy fillets
- 20g taggiasca olives
- 250g pomodoro sauce
- 2 shallots (thinly sliced)
- parsley
- thyme
- salt
- pepper
Method
Drop the pasta in salted boiling water.
Heat olive oil in a pan. When hot, add anchovy fillets and melt in the hot oil. Once melted, add the thinly sliced shallots and cook until soft. Add the pomodoro sauce and the olives. While this cooks together, chop the parsley and clean the thyme then set aside. Add the drained tuna to the pan and stir to combine with the pomodoro sauce mixture. When the pasta is al dente, add this to the pan with the tuna and pomodoro sauce. Toss all together for a couple of minutes until the sauce coats the paccheri. Just before plating, add the fresh herbs
Remove from the heat, serve and enjoy!
